Lentil salad

We need for 1 portion:

  • 80g red lentil,
  • 10g garlic,
  • 50g onion,
  • 25g dried tomatoes,
  • 40g green olives,
  • 20g spinach leaves,
  • 10g grated parmesan,
  • 5ml olive oil,
  • turmeric,
  • ground black pepper,
  • salt,
  • dried ground chilli (optional).

Wash the red lentils and cook in salted water for 5-10 minutes. No hours of soaking are required. After cooking, pour water over and zest the lentils with turmeric, black pepper and possibly salt.

Meanwhile, fry the diced onion, crushed garlic, tomatoes (if you have too big pieces, you need to cut them into smaller ones), olives and finely chopped spinach leaves in olive oil. It really need only 2-3 minutes to keep everything crunchy.

Pour this fine mixture on the lentils and at the end add only grated Parmesan cheese and if you want and have a taste, also ground chilli.

This dish is suitable as a quick dinner. The preparation time is really only 10-15 minutes. Lentils are full of vitamins, proteins, complex carbohydrates and fiber. What more do you need?
